This is crafted using a blend of one, two and three year old lambic. Unpasteurised and unfiltered, the lambic used is brewed with 60% barley malt, 40% unmalted wheat, aged hops and water. It is spontaneously fermented using wild yeast and matured in oak casks. Post blending, this is aged in-bottle for a minimum of six and continued fermentation gives this it’s trademark champagne-like spritziness. As a result, expect boisterous fresh citrus aromas as well as mellow oaky flavours arising from the barrel ageing.
