We’ve arrived at number 13 in our Brewery of the Month series and this is one we’re excited to write about! For this Brewery of The Month, we’re going to County Laois in the heart of Ireland to showcase a true grain to glass brewery with Ballykilcavan Farm & Brewery! Be sure to scroll on down and see what they’re all about. Slainte!

So, Who Are Ballykilcavan Farm & Brewery?

Located in Stradbally, Co. Laois, Ballykilcavan Farm has been family-owned for 13 generations and traces its lineage back as far as 1639. The 440 hectare farm uses its award-winning barely and ingredients grown less than 500 metres from the brewery to produce some mighty fine IPAs, red ales, limited editions, and more.

Ballykilcavan is a verified Origin Green member, and in both 2022 and 2023, were awarded the highest possible Gold membership level, making them one of only two breweries of any size in the country to be currently rated as Gold members.

From Grain To Glass

The grounds of their 440 hectare farmland and forestry are beautifully preserved, particularly the hedgerows and trees in the fields. In fact, the original 18th century stone farmyard, 19th century stable yard, walled garden, and gardener's tunnel can still be found as well as the champion black walnut tree of Ireland.

Traditionally, Ballykilcavan was always a mixed farm, with woodland, grass for livestock and fields of crops. Barley grown on the farm is used for each of their beers, along with a crop of barley for Waterford Distillery where it is malted by Minch Malt, just 11km down the road in Athy.

The brewing water is sourced from their own well just outside the brewery building. As well as their own barley, the brewery has a small but expanding hop garden. They grow mainly traditional British varieties, along with a few early maturing American varieties we're looking forward to seeing in future releases!
